HOW TO PREPARE ASUN.

“Asun” is a spicy, grilled goat meat dish that originates from the Yoruba people in Nigeria. It’s often served at parties and festive occasions. The goat meat is typically grilled or parboiled, then stir-fried in a spicy pepper sauce. Here’s a detailed guide on how to prepare Asun:

Ingredients:
1 kg (2.2 lbs) goat meat (preferably with some skin)
4 Scotch bonnet peppers
2 bell peppers
1 medium onion
3 cloves of garlic (minced)
1 thumb-sized piece of ginger (minced)
2 tablespoons vegetable oil
2 tablespoons ground crayfish
2 seasoning cubes or 1 teaspoon seasoning powder
Salt to taste
1 tablespoon thyme
1 tablespoon curry powder
Chopped parsley or sliced onions for garnish (optional)
Instructions:
Step 1: Prepare and Cook the Goat Meat
Clean: Wash the goat meat thoroughly and cut it into bite-sized chunks.
Marinate: Season the meat with salt, thyme, curry powder, minced garlic, minced ginger, and a bit of chopped onions. Allow it to marinate for at least 30 minutes or overnight in the refrigerator for a more intense flavor.
Cook: Parboil the goat meat until it is tender, ensuring it is not overly soft. You can also grill or roast it until it’s well cooked and slightly charred on the outside.
Step 2: Prepare the Pepper Sauce
Blend Peppers: Combine the Scotch bonnet peppers and bell peppers in a blender. Blend until you achieve a somewhat smooth paste.
Sauté Onions: Heat vegetable oil in a pan. Add chopped onions and sauté until they become translucent.
Add Pepper Mix: Add the blended pepper mix to the sautéed onions. Cook for a few minutes until the sauce thickens.
Add Crayfish: Stir in the ground crayfish and allow the sauce to simmer for about 10 minutes, stirring occasionally.
Step 3: Stir-fry the Meat
Add Goat Meat: Introduce the cooked (or grilled) goat meat into the pepper sauce.
Stir-fry: Toss the meat in the sauce, ensuring it’s well coated and allow it to cook together for another 5-7 minutes.
Season: Add seasoning cubes or powder and adjust salt. Mix thoroughly and let it cook for an additional 3-5 minutes.
Step 4: Garnish and Serve
Garnish: Add chopped parsley or sliced onions as a garnish (optional).
Serve: Serve your Asun hot as an appetizer or a side dish.
Notes:
Spiciness: Adjust the Scotch bonnet peppers according to your heat tolerance.
Grilling: For an authentic smoky flavor, ensure the meat is grilled to a bit of char. You can use an oven grill, barbecue grill, or a grill pan.
Variations: Feel free to add other spices or herbs according to your preference.
Enjoy your spicy Asun!
