HOW TO PREPARE BULGOGI.

Bulgogi is a classic Korean dish of thinly sliced, marinated beef that is usually grilled, but it can also be pan-fried. It’s known for its sweet and savory flavor. Here’s a basic recipe to prepare Bulgogi:

Ingredients:
Beef: 500g (about 1 lb.) of thinly sliced beef (ribeye or sirloin are common choices).
Marinade:
½ medium yellow onion, thinly sliced
2-3 green onions, sliced
3-4 tablespoons of light soy sauce
2-3 tablespoons of sugar
1 tablespoon of minced garlic
2 tablespoons of mirin or rice wine
1 tablespoon of toasted sesame oil
1 tablespoon of toasted sesame seeds
½ teaspoon of black pepper
1 small Asian pear, grated (or you can use kiwi or apple) – this acts as a tenderizer and adds a subtle sweetness.
Optional: 1 tablespoon of grated ginger for additional flavor.
Instructions:
Preparation of the Beef:

If you’re starting with a whole cut of beef, freeze it for about 1 hour to make it easier to slice thinly.
Using a sharp knife, slice the beef into very thin slices.
Marinating the Beef:

In a mixing bowl, combine soy sauce, sugar, minced garlic, mirin or rice wine, sesame oil, sesame seeds, black pepper, and the grated pear (and ginger if you’re using it).
Mix well until the sugar dissolves.
Add the beef slices to this marinade ensuring every slice is well coated. Then, mix in the sliced onions.
Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least an hour. If you can, letting it marinate overnight is even better.
Cooking:

Preheat a grill or a skillet over medium-high heat. If using a skillet, you might want to add a little bit of oil to prevent sticking.
Add the marinated beef slices in a single layer. Cook each side for about 1-2 minutes or until they are nicely browned and cooked through.
If there’s any leftover marinade in the bowl, you can pour it over the beef while it’s cooking for added flavor, but this is optional.
Serving:

Once cooked, transfer the beef to a plate.
Garnish with sliced green onions and additional sesame seeds if desired.
Bulgogi is often enjoyed with a side of rice, lettuce leaves for wrapping, and various Korean side dishes (like kimchi).
