Ingredients:
Fresh cherries: 500 grams (about 1 pound). Traditionally, the cherries are left unpitted to add a slight almond flavor to the dish, but you can pit them if you prefer.
Granulated sugar: 100 grams (about 1/2 cup)
All-purpose flour: 100 grams (about 3/4 cup)
Salt: a pinch
Eggs: 4 large
Whole milk: 300 ml (about 1 1/4 cups)
Vanilla extract: 1 teaspoon
Butter: for greasing the pan and a little to dot over the top
Powdered sugar: for dusting (optional)
Instructions:
Preparation of the cherries: Wash, dry, and stem the cherries. If you choose to pit them, do so. Otherwise, you can leave them whole.

Preheat the oven: Preheat your oven to 180°C (350°F).

Prepare the batter:
a. In a mixing bowl, whisk together the sugar, flour, and a pinch of salt.
b. In another bowl, beat the eggs, then add the milk and vanilla extract. Mix well.
c. Gradually add the wet mixture to the dry ingredients, whisking until you have a smooth batter. It should resemble a thin pancake batter.

Assembly:
a. Generously butter a medium-sized baking dish (e.g., a 9-inch round dish).
b. Spread the cherries evenly across the bottom of the dish.
c. Pour the batter over the cherries.
d. Dot the top with a few small pieces of butter.

Bake: Place the baking dish in the oven and bake for about 35-45 minutes or until the Clafoutis is puffed up, golden brown, and a knife inserted into the center comes out clean.

Serve: Once removed from the oven, allow it to cool for a few minutes. It will deflate slightly. Dust with powdered sugar if desired. Cherry Clafoutis is best served warm, but it can also be enjoyed at room temperature or cold.

Note: You can also make Clafoutis with other fruits, like blueberries, raspberries, or sliced pears, following the same basic method. Adjust the sugar quantity based on the sweetness of the fruit you’re using.
