HOW TO PREPARE EBA.

Eba is a popular Nigerian staple food, made from dried grated cassava (garri) which has been processed. It’s quite easy to prepare and is typically served with soups such as Egusi, Okra, Vegetable, or other local Nigerian soups. Here’s a simple guide on how to prepare Eba:

Ingredients:
Garri (dried grated cassava): 2 cups
Boiling hot water: 3 cups (you may need slightly more or less, so add gradually)
A bowl
A wooden spatula or a spoon for stirring
Instructions:
Boil Water:

Bring water to a rolling boil.
Pour Garri:

In a heat-proof bowl, pour the garri, ensuring to remove any lumps.
Some people prefer to sift the garri to ensure there are no lumps and it’s finely textured.
Add Hot Water:

Gradually add the boiling hot water to the garri, stirring continuously as you do so. Be cautious of the steam.
It’s important to add the water little by little to avoid making the Eba too watery.
Stir vigorously to get a smooth mixture. Ensure that there are no lumps.
Stir and Beat:

Continue to stir and beat with the spatula or spoon until the Eba becomes smooth, stretchy, and forms a dough.
Check Consistency:

The Eba should be stretchy, smooth, and hold together. If it is too hard, you may add a little more hot water and mix well. If it’s too soft, add a bit more garri and mix until you achieve the desired consistency.
Serve:

Mold the Eba into serving-size balls and place them on a plate. Some people use a plastic wrap or plastic bowl to shape the Eba into a neat, round form.
Serve with your choice of Nigerian soup, like Egusi, Okra, or Ogbono.
Additional Notes:
Texture: The texture of the Eba should be elastic, smooth, and it should hold together without being sticky.

Serving: Eba is generally served slightly warm and is used to scoop up Nigerian soups.

Storage: If you have leftovers, store them in the fridge in a covered container. To reheat, you might add a bit of water and microwave it or steam it until it’s warm and has regained its elasticity.

Eba is a staple in many West African meals and is enjoyed for its heartiness and its ability to pair well with various hearty soups and stews. Enjoy your meal!
