Enchiladas are a delicious traditional Mexican dish consisting of tortillas filled with a variety of ingredients and covered with a chili sauce. Here’s a basic recipe for chicken enchiladas, though you can modify the filling as you see fit:

Chicken Enchiladas

Ingredients:

2 cups cooked, shredded chicken (from about 2-3 chicken breasts)
2 cups enchilada sauce (store-bought or homemade)
2 cups shredded cheese (like cheddar or Monterey Jack)
1 cup sour cream or Greek yogurt (optional)
1 small onion, finely chopped
2 cloves garlic, minced
10-12 corn tortillas
2 tbsp oil
Salt and pepper to taste
Optional toppings: chopped cilantro, diced tomatoes, sliced green onions, sliced jalapeños, etc.
Instructions:

Preheat the Oven: Preheat your oven to 375°F (190°C).

Sauté the Filling: In a skillet, heat the oil over medium heat. Add the onion and sauté until translucent. Add the garlic and sauté for another minute. Add the shredded chicken, half of the enchilada sauce, half of the cheese, and sour cream (if using). Stir until everything is combined and heated through. Season with salt and pepper.

Warm the Tortillas: This makes them more pliable. You can do this by placing them in a dry skillet over medium heat for about 15 seconds on each side or by microwaving them between damp paper towels for about 30 seconds.

Assemble the Enchiladas: Lay a tortilla flat on a work surface. Place a few tablespoons of the chicken mixture in the center. Roll the tortilla tightly around the filling and place it seam side down in a baking dish. Repeat with the remaining tortillas.

Top and Bake: Pour the remaining enchilada sauce over the rolled enchiladas, spreading it out with a spoon. Sprinkle the remaining cheese on top. Cover the dish with foil and bake in the preheated oven for about 20 minutes. If desired, you can remove the foil and broil for an additional 2-3 minutes to brown the cheese.

Serve: Remove from oven and let cool slightly. Serve the enchiladas hot with your choice of toppings.

Note: You can make your own enchilada sauce if you prefer, or use a variety of fillings like beef, pork, cheese, or vegetables. Experiment and enjoy!
