Farofa is a traditional Brazilian dish made from manioc (cassava) flour. It’s often served alongside rice, beans, and meat dishes, especially during festive occasions like barbecues and holidays. Here’s a basic recipe for preparing farofa:

Ingredients:

2 cups of manioc (cassava) flour (farinha de mandioca)
4 tablespoons of butter or cooking oil
1 onion, finely chopped
2 cloves of garlic, minced
Optional: 2 eggs, beaten
Optional: 1 cup of bacon or smoked sausage, diced
Optional: green onions, parsley, and/or bell pepper for added color and flavor
Salt and black pepper to taste
Instructions:

Prepare Ingredients: If you’re including bacon or sausage in your farofa, dice them into small pieces. Finely chop the onion, garlic, and any other optional ingredients you’re using.

Cook the Meat (if using): In a large skillet or frying pan, fry the bacon or sausage until they are crispy. Remove them from the pan and set them aside.

Sauté the Aromatics: In the same pan, add the butter or cooking oil. Once melted and hot, add the chopped onions and sauté them until they become translucent. Add the minced garlic and continue to sauté for another 2 minutes.

Eggs (optional): If you’re using eggs, pour the beaten eggs into the pan. Stir constantly until they’re just set, almost like a scrambled egg texture.

Add the Manioc Flour: Gradually sprinkle the manioc flour into the skillet, stirring constantly. The flour will absorb the butter or oil, and you want to ensure it’s evenly mixed.

Season: Add salt and black pepper to taste. Stir everything together.

Add the Meat Back: If you cooked bacon or sausage, add it back to the pan now.

Stir until Golden: Continue stirring the mixture for another 5-10 minutes until the manioc flour turns a golden color. The goal is to have it toasted but not burned.

Garnish and Serve: Garnish with optional green onions, parsley, or bell pepper if you like. Farofa should be slightly crunchy. Serve it warm alongside other dishes.
