2 pounds (about 900g) goat meat, cut into chunks

Marination (optional but recommended)
2 tablespoons yogurt
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon coriander powder

Combine all marination ingredients with the goat meat. Mix well, cover, and let it marinate for at least 2 hours or overnight in the refrigerator.
Cooking Method
Browning the Meat:
Heat oil or ghee in a heavy-bottomed pan or pressure cooker.
Add the marinated goat meat and brown on all sides. Remove and set aside.
Sautéing the Aromatics:
In the same pan, add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn golden brown.

Cooking the Goat:
Add water, ensuring the meat is mostly submerged.
Cover and cook until the goat is tender. If using a stovetop method, this may take 1.5-2 hours. If using a pressure cooker, follow the device’s guidelines for meat, which might be around 15-20 minutes after reaching pressure.
Optionally, you can add yogurt or coconut milk for a creamier consistency at this point and simmer for an additional 10 minutes.
