HOW TO PREPARE KHOA SO.

“Khoa” (also known as “khoya” or “mawa”) is a milk product widely used in Indian cuisine. It’s made by simmering full-fat milk in a large, heavy-based pan for several hours, during which time the water content evaporates and leaves behind a thick, granular residue. Khoa is the base for many Indian sweets like “gulab jamun,” “barfi,” and “peda.”

Here’s a step-by-step guide to prepare khoa:

Ingredients:

Full-fat milk (2 liters is a good starting point for homemade khoa)
Procedure:

Choose a Pan: Use a wide, heavy-bottomed pan to ensure even heating and to prevent the milk from sticking or burning.

Pour and Boil: Pour the milk into the pan and place it over medium heat. Bring the milk to a boil, ensuring you stir occasionally to prevent it from sticking to the bottom.

Simmer and Reduce: Once the milk comes to a boil, reduce the heat to a simmer. The milk will begin to thicken over time. Keep stirring occasionally to ensure it doesn’t stick to the bottom or form a skin on the top.

Frequent Stirring: As the milk thickens even more, you’ll need to stir more frequently to prevent burning.

Check Consistency: Eventually, the milk will reduce to a thick, grainy consistency. The total reduction time can be a few hours, so patience is essential. The final consistency of the khoa should be thick and granular but moist.

Cool and Store: Once you achieve the desired consistency, turn off the heat and let the khoa cool down. Once cooled, you can store it in an airtight container in the refrigerator. It should be used within a few days.

Notes:

The exact yield of khoa depends on the fat content of the milk and the level of reduction. Generally, 2 liters of milk will yield around 250-300 grams of khoa.
There are different varieties of khoa based on their moisture content and uses, such as hard khoa (used for burfis), soft khoa (used for halwas), and danedar khoa (used for kalakand).
Always ensure you’re using fresh, full-fat milk for the best results.
This homemade khoa can be used in a variety of desserts or even savory dishes, depending on your preference. Enjoy!
