Korma is a classic Indian dish made with meat (like chicken or lamb) or vegetables braised in a yogurt or cream-based sauce, flavored with aromatic spices and ground nuts. Here’s a basic Chicken Korma recipe to get you started:

Chicken Korma Recipe
Ingredients:

500g chicken, cut into pieces
2 medium onions, finely sliced
3-4 cloves garlic, minced
1-inch piece of ginger, minced
2-3 green chilies, slit (optional, adjust to taste)
200ml yogurt, whisked
100ml heavy cream (or coconut milk)
10-12 cashews (or almonds), soaked in warm water and ground into a paste
1 tsp turmeric powder
1 tsp red chili powder (adjust to taste)
1 tsp garam masala
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp ground cardamom
3-4 cloves
1 bay leaf
1-inch piece cinnamon stick
Salt to taste
Fresh coriander leaves, chopped (for garnish)
3-4 tbsp oil or ghee
Instructions:

Onions to Golden Brown: In a large pan or pot, heat the oil or ghee. Add the sliced onions and fry them until they turn golden brown. Remove half for garnishing later.

Add Aromatics: To the remaining onions, add the minced garlic, ginger, and green chilies. Sauté for a couple of minutes until the raw smell goes away.

Add Dry Spices: Add turmeric powder, red chili powder, ground coriander, ground cumin, cloves, bay leaf, and cinnamon stick. Mix well and sauté for a minute or two.

Chicken: Add the chicken pieces and sauté until they are browned on all sides.

Yogurt: Reduce the heat to low and carefully add the whisked yogurt to the pot. Mix well, ensuring the yogurt doesn’t curdle.

Nuts Paste: Stir in the cashew or almond paste. This will give the korma its rich texture.

Simmer: Cover the pot and let the chicken simmer on low heat for about 20-25 minutes.

Add Cream & Finish: Stir in the heavy cream or coconut milk, ground cardamom, and garam masala. Let it cook for another 5-7 minutes. Check for seasoning and adjust salt and spices as needed.

Garnish & Serve: Garnish with the reserved fried onions and chopped coriander leaves. Serve hot with naan, roti, or rice.

Note: This is a basic Korma recipe, and there are many regional variations. Some might include saffron, poppy seeds, or other spices. You can customize the recipe to your liking!
