Ah, Schnitzel! It’s a delicious dish that’s popular in many countries, especially in Austria where Wiener Schnitzel is considered a national dish. Here’s a basic recipe for preparing a classic Wiener Schnitzel:

Ingredients:
4 veal (or pork) cutlets
Salt and freshly ground pepper
1 cup all-purpose flour (for dredging)
2 large eggs
2 tablespoons water or milk
2 cups fine bread crumbs
Vegetable oil or lard, for frying
Lemon wedges, for serving
Instructions:
Preparation of the Meat:

Lay out the veal or pork cutlets on a chopping board. If they’re thick, you’ll want to thin them out. Place a cutlet between two pieces of plastic wrap or parchment paper.
Using a meat mallet, gently pound the meat to a thickness of about 1/4 inch (0.5 cm), working from the center outwards. Be careful not to tear the meat.
Season each cutlet with salt and pepper on both sides.
Dredging Station Setup:

On a plate, spread out the flour.
In a shallow bowl, whisk together the eggs and water or milk.
On another plate, spread out the bread crumbs.
Dredging Process:

Dredge each cutlet first in the flour, shaking off the excess.
Dip it into the egg mixture, ensuring it’s well coated.
Finally, coat it with the bread crumbs. Press the crumbs onto the cutlet gently to ensure a good coating. Lay them out on a wire rack or tray, ensuring they don’t overlap.
Frying:

In a large skillet, heat the oil or lard over medium-high heat. The oil should be about 1/2 inch deep in the skillet. You can test the oil by dropping a small piece of bread crumb in it — if it sizzles immediately, it’s ready.
Carefully place the cutlets into the hot oil, without overcrowding. Fry them for about 2-3 minutes on each side or until they are golden brown.
Once fried, transfer the Schnitzels to a plate lined with paper towels to drain any excess oil.
Serving:

Serve the Schnitzel hot, garnished with lemon wedges. It’s traditional to squeeze a bit of lemon juice over the Schnitzel just before eating.
