HOW TO PREPARE SOUVLAKI.

Souvlaki is one of the most popular Greek dishes. It consists of small pieces of meat (and sometimes vegetables) grilled on skewers. While pork is the most common meat used in souvlaki, chicken, lamb, and beef can also be used. Here’s a basic recipe for preparing pork souvlaki:

Ingredients:
500g (around 1 lb) pork shoulder or pork tenderloin, cut into 2.5 cm (1-inch) cubes
3-4 cloves garlic, minced
Juice of 1-2 lemons
2-3 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon dried thyme (optional)
Salt and freshly ground black pepper, to taste
Wooden skewers (soaked in water for at least 30 minutes to prevent burning)
Marinade:
In a mixing bowl, combine the minced garlic, lemon juice, olive oil, oregano, thyme (if using), salt, and pepper. Mix well.
Add the pork cubes to the marinade, ensuring they are well coated.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight. This will allow the flavors to meld and the meat to tenderize.
Cooking:
Preheat Grill: If using a charcoal or gas grill, preheat it to medium-high heat. If cooking indoors, you can use a grill pan.

Thread the Pork: Remove the pork from the marinade, letting any excess drip off. Thread the pork cubes onto the pre-soaked wooden skewers.

Grill the Souvlaki: Place the skewers on the hot grill and cook for 10-12 minutes, turning occasionally, until the pork is cooked through and has a nice char on the outside.

Serving: Serve the souvlaki hot with sides like tzatziki sauce, Greek salad, pita bread, and lemon wedges.

Notes:
For a variation, you can intersperse pieces of bell pepper, onion, or tomato between the meat pieces on the skewer.
Chicken, lamb, or beef can be used in place of pork. Adjust the cooking time based on the meat type and its size.
