Spring rolls are popular in many Asian countries, and there are various versions depending on the region. The following is a basic recipe for vegetable spring rolls, which can be easily modified to include meat or other fillings of your choice:

Ingredients:
Spring roll wrappers (available at Asian markets or the international aisle of large supermarkets)
2 cups shredded cabbage or coleslaw mix
1 cup julienned carrots
1/2 cup thinly sliced bell peppers (any color)
2 green onions, thinly sliced
2 cloves garlic, minced
1 tablespoon oil (for sautéing)
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
Salt and pepper, to taste
Oil (for frying)
Water (for sealing the wrappers)
Directions:
Prepare the Filling:

In a large skillet or wok, heat the 1 tablespoon of oil over medium heat.
Add the garlic and sauté until it’s aromatic.
Add the carrots, bell peppers, and cabbage. Cook for a few minutes until the vegetables start to soften.
Add the soy sauce and oyster sauce. Mix well.
Add the green onions, and stir-fry for another 1-2 minutes. Season with salt and pepper.
Remove from heat and allow the mixture to cool.
Wrap the Spring Rolls:

Lay out a spring roll wrapper on a clean surface, positioning it as a diamond (one corner pointing to you).
Place about 2 tablespoons of the vegetable mixture near the bottom corner of the wrapper.
Fold the bottom corner over the filling, then fold in the two side corners.
Roll the wrapper tightly upward, leaving the top corner last.
Wet the top corner with a little water and press it against the roll to seal.
Frying:

Heat oil in a deep fryer or large pan to 350°F (175°C).
Once the oil is hot, carefully slide a few spring rolls into the oil, making sure not to overcrowd the pan.
Fry until they turn golden brown, which will take about 3-5 minutes, then remove and drain on paper towels.
Serving:

Serve hot with dipping sauces like sweet chili sauce, soy sauce, or hoisin sauce.
Notes:

For a healthier version, you can bake the spring rolls instead of frying. Preheat your oven to 400°F (200°C) and bake them for 20-25 minutes or until golden brown.
Feel free to adjust the fillings to your preference. Common additions include shrimp, chicken, mushrooms, or bean sprouts.
Fresh herbs like cilantro or basil can add a nice flavor twist.
