HOW TO PREPARE STIFADO.

Stifado is a traditional Greek stew made primarily with beef (or sometimes rabbit) and a rich tomato sauce, flavored with onions, spices, and wine. Here’s how to make Stifado:

Ingredients:
1 kg (around 2.2 lbs) beef, cut into large cubes (or rabbit pieces)
500g (about 1 lb) small shallots or pearl onions, peeled
3-4 cloves of garlic, finely chopped
1 can (400g/14 oz) of tomatoes, chopped or whole
250ml (1 cup) red wine
2-3 tablespoons red wine vinegar
2 tablespoons tomato paste
2 bay leaves
1 cinnamon stick
3-4 whole cloves
1 teaspoon dried oregano
Olive oil for frying
Salt and freshly ground black pepper to taste
Instructions:
Brown the Meat: In a large pot or dutch oven, heat some olive oil over medium-high heat. Add the beef (or rabbit) pieces in batches and brown them on all sides. Remove and set aside.

Cook the Onions: In the same pot, add a bit more olive oil if needed and add the shallots or pearl onions. Fry them until they are lightly browned all over. This will give the Stifado a nice sweetness. Remove them and set aside.

Sauté Garlic: Add the chopped garlic to the pot and sauté for a minute or so, just until fragrant.

Deglaze: Pour the red wine and red wine vinegar into the pot. Use a wooden spoon to scrape the bottom of the pot, lifting any browned bits.

Add Tomatoes and Spices: Add the canned tomatoes, tomato paste, bay leaves, cinnamon stick, cloves, and dried oregano. Stir everything together.

Return Meat and Onions: Add the browned beef (or rabbit) pieces back into the pot along with the fried shallots or pearl onions. Season with salt and pepper.

Simmer: Lower the heat to low, cover the pot, and let it simmer gently for about 1.5 to 2 hours, or until the meat is tender and the sauce has thickened. Stir occasionally and check for seasoning, adjusting if necessary.

Serving: Once cooked, remove the bay leaves, cinnamon stick, and cloves. Serve the Stifado with boiled rice, mashed potatoes, or crusty bread to soak up the delicious sauce.
